Cheddar Bay Ramp Biscuits

Today, I would like to share with you a recipe that I have adapted from Spend With Pennies: Copycat Red Lobster Cheddar Bay Biscuits, but with RAMPS!
I first made these last year and they were so dang tasty, but of course, I didn’t write down the recipe or save it so I had to start fresh this year. However, I found this recipe and I liked it because it utilizes ingredients that I have on hand, and not the Bisquick ready mix.
First off, ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon garlic powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1/3 cup butter
1 cup shredded cheese
6 (or more) bunches of ramps
For the garlic butter:
1/4 cup melted butter
1 teaspoon dried parsley
1 teaspoon garlic powder or my minced garlic (fresh garlic might be too spicy)
1 teaspoon Old Bay seasoning
In a bowl, combine flour, baking powder, garlic powder, baking soda, and salt. Add butter and use a fork, pastry cutter, or your hands to crumble the butter into pea-size pieces.
Add milk, shredded cheddar cheese, and ramps into the dough and mix. Try not to over-mix your dough. With biscuits, the more you mix/stir your dough, the more tough the final product becomes. Mix until just incorporated.
Drop heaping spoonfuls onto parchment or silicon-mat lined baking sheet. Makes 12, good-sized biscuits. Bake at 400 degrees for around 20-25 minutes, or until golden brown.
While the biscuits are baking, combine melted butter and seasonings for garlic butter. Brush garlic butter on biscuits once baked, and serve warm.
These definitely taste better when they are fresh and still warm from the oven. I have reheated them in the microwave the next day, but they do lose that classic crusty, crunchy, biscuit texture.
If you don’t forage ramps, try making these without the ramps, or maybe replace them with fresh green onions! I love the combination of garlic and onion flavor these biscuits have, and who doesn’t love the ones served at Red Lobster!?
